What? Didn't I already make banana bread? Yes I did. But it turns out two separate people thought I should have a banana bread recipe, so I got to make it twice.
Banana Bread Recipe #2 was from my beloved friend Kristin, part of the chain of friends who is actually responsible for Josh and my meeting each other, so it is only fitting that I do one of her recipes in our wedding recipe book. Then again, I'm doing all of them, so I don't know what I'm saying.
Anyhoot. I love Kristin and her banana bread is very different from my cousin Tracy's. I think that Tracy's banana bread is more of the gourmet kind--and oddly a gourmet kind (which as you know) I pulled off. Big moist chunks of banana, nuts, etc. It tasted high-rent. Kristin's is more of the healthy kind - whole wheat flour in lieu of regular processed crap flour, honey in lieu of sugar, etc. The kind a woman named Lentil would make for you with some chrysanthemum tea (which it must be said my acupuncturist said is good for rashes) while making you discuss what mythical beast best personifies your vagina.
That said, I actually liked Kristin's recipe better. This is weird. I don't much like honey. I don't much like whole wheat. We all know I don't like bananas. And while I made it I thought, 'Hmm, this does not smell good (probably because it smelled like honey and wheat and bananas).'
But my beloved Kristin is not to be so easily squelched. Like Ponzi Bread, her Banana Bread more than the sum of its parts. I think I preferred this one because it tasted more 'bread' than 'banana.' This could be because I mixed this batch more thoroughly. Or because I have a cold and can't taste anything. Or because it is just a mix I prefer. But I am shocked to say this Banana Bread Recipe gets my thumbs up. I ate it for breakfast the past couple of days between sniffles so that I could have enough sustenance to stomach my daily sudafed and it kept me alive. I may even make it again.
Who knew?
(Kristin's) Banana Bread
3 small bananas (seriously, do you really size the bananas or do you just grab what you have?)
3/4 cup honey
1/4 cup melted butter or margarine
1 tsp baking soda
1/2 tsp salt (Nick says kosher salt is better for cooking, so from hereon in recipes will all feature kosher salt unless otherwise noted)
2 beaten eggs
1 1/2 cup whole wheat flour
Mash bananas. Add honey, butter (or margarine), baking soda, salt, eggs and flour in that order. Discover the honey is glumped up into a death mass in its container. Have Josh explain that if you just put in a drop of water you can then microwave it into proper viscosity. Remember Nick's advice about Kosher Salt. Try not to cough too much into mixing bowl.
Place in greased 9x 5 1/2 x 3" loaf pan. Be relieved this one calls for a loaf pan like all normal banana bread should.
Bake at 350 degrees for 1 hour. Sulk on sofa feeling bad for yourself and your cold. Remove from pan at once. Cool on wire rack. Eat every morning with sudafed. Survive.
